Ingredients:
- 6-8 pieces Dried kokum (unsalted)
- Pink salt, to taste
- A pinch of Hing (asafoetida)
- 1/2 tsp Crushed green chilies (optional)
- 3-4 Curry leaves
- 2 cups Thin coconut milk
- 1/2 tsp Cumin seeds
- 1/2 tsp Grated ginger
- Crushed garlic (optional)
- 2 tablespoons Sattu
Method:
- Soak kokum in warm water or normal water for a few minutes and later extract the kokum water (similar to extracting tamarind juice).
- Transfer the kokum water into a bowl and add coconut milk, pink salt, hing, and mix well.
- Take freshly crushed green chilies, ginger, and garlic in a strainer and dip it in kokum water to extract their flavours.
- Heat coconut oil in a pan for tempering. When hot, add cumin seeds, curry leaves, and mix in the kokum mixture.
- Add sattu to the mixture and stir well until fully dissolved. Turn off the heat, let it cool down, refrigerate if needed, or serve warm.
- Sattu Kokum Coolant is ready to serve.
