1 cup red lentils, pre-soaked and pressure-cooked
1 small onion, finely chopped 
1 tbsp cold-pressed coconut oil
1 tsp ground cumin
½ tsp ground coriander powder
½  tsp paprika
¼  tsp cayenne pepper (adjust to your spice preference)
Juice of 1 lemon
Salt and pepper to taste
Fresh cilantro for garnish (optional)

Method:

  1. In a pan, heat the coconut oil over medium heat. Sauté the chopped onions and garlic until they become translucent and fragrant.
  2. Add the cooked red lentils to the pan with onions and garlic. Stir in the ground cumin, coriander, paprika, and cayenne pepper. Mix well and let the flavors meld for a few minutes.
  3. Remove the mixture from the heat and allow it to cool slightly.
  4. Transfer the lentil mixture to a food processor or blender. Add the lemon juice, salt, and pepper. Blend until you get a smooth and creamy consistency. Adjust the consistency by adding a little water if needed.
  5. Taste and adjust the seasoning according to your preference.
  6. Serve the spicy red lentil dip in a bowl, and garnish with fresh cilantro.
