Sesame Seeds Chikki Recipe

Time: 15 to 20 minutes.
Makes 20 mini square shape chikki
Ingredients:
- 2 cups organic jaggery
- 2 cups roasted sesame seeds
- 1 tsp cardamom powder
- Pinch of saffron threads
- 1 tbsp A2 ghee
Method:
- In a pan, lightly roast the sesame seeds on medium heat. Remove from heat and set aside to cool.
- In a saucepan, heat ghee and jaggery over very low heat until they melt and start bubbling.
- Add cardamom powder and saffron threads. Avoid stirring, but swirl the pan for even cooking and caramelization.
- Cook until the mixture reaches the hard crack stage.
- Remove the jaggery mixture from heat and quickly add the roasted sesame seeds. Mix until they are well-coated.
- Spread the mixture on a flat tray and flatten it to the desired thickness using a well-oiled rolling pin or spatula.
- Allow it to cool completely.
- Break it into the desired size pieces and store iit n airtight containers.
