Rethinking Ketchup: A Healthy, Homemade Alternative

Serves: 450 ml of sauce 

Preparation time: 10 minutes 

Total time: 30 minutes 

Ingredients:

–  4 ripe tomatoes, chopped

– 1 small onion, finely chopped

– 2 garlic cloves, minced

– 1 tsp dried oregano or basil

– 1-2 tsp apple cider vinegar (adjust to taste)

– 1 tsp jaggery (adjust to taste)

– Salt and pepper to taste

– Fresh basil leaves (optional, for garnish)

Method:

  1. If you prefer a smoother sauce, peel the tomatoes by blanching them in boiling water for 30 seconds, then transferring them to ice water to remove the skins. Alternatively, leave the skins on for if you like textured consistency of sauce.
  1. Heat a pan over medium heat. Add the chopped onions and sauté until soft or and translucent (around 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.
  1. Add the chopped tomatoes to the pan. Stir well and let them cook down for about 10-15 minutes until they soften and release their juices.
  1. Add the dried oregano or basil, salt, pepper, jaggery, and apple cider vinegar (with mother). Stir well and let the sauce simmer on low heat for another 10 minutes, stirring occasionally.
  1. For a smoother sauce, blend with an immersion blender. Garnish with fresh basil leaves if desired and serve warm.
  1. Refrigerate, and transfer the sauce to an airtight container. You can store the suace in the refrigerator for up to 5-7 days.
