Ingredients:
1 cup steel-cut oats
½ cup shredded unsweetened coconut
½ cup almond butter
¼ cup raw honey or maple syrup
¼ cup chopped almonds
¼ cup chia seeds
1 tsp vanilla extract
A pinch of salt
Method
- In a large mixing bowl, combine steel-cut oats, shredded coconut, chopped almonds, and chia seeds. Mix thoroughly.
- Add almond butter, honey or maple syrup, vanilla extract, and a pinch of salt to the dry mixture. Mix until all ingredients are well combined.
- Take a tbsp-sized portion of the mixture and roll it into a bite-sized ball using your hands. Repeat until all the mixture is used up.
- Place the bites on a tray or plate and let them chill in the refrigerator for at least 30 minutes. This helps them firm up.
- Once they’re chilled and set, transfer them to an airtight container. Store them in the refrigerator for up to two weeks.
- Grab one or two of these bites whenever you need a quick and nutritious snack!
