Ingredients:

1 cup steel-cut oats
½  cup shredded unsweetened coconut
½ cup almond butter
¼  cup raw honey or maple syrup
¼  cup chopped almonds
¼  cup chia seeds
1 tsp vanilla extract
A pinch of salt

Method 

  1. In a large mixing bowl, combine steel-cut oats, shredded coconut, chopped almonds, and chia seeds. Mix thoroughly.
  2. Add almond butter, honey or maple syrup, vanilla extract, and a pinch of salt to the dry mixture. Mix until all ingredients are well combined.
  3. Take a tbsp-sized portion of the mixture and roll it into a bite-sized ball using your hands. Repeat until all the mixture is used up.
  4. Place the bites on a tray or plate and let them chill in the refrigerator for at least 30 minutes. This helps them firm up.
  5. Once they’re chilled and set, transfer them to an airtight container. Store them in the refrigerator for up to two weeks.
  6. Grab one or two of these bites whenever you need a quick and nutritious snack!
