Nutritious Millet Honey Pancakes to Keep Your Kids Happy and Healthy

Ingredients:

  • 1 cup jowar flour
  • 1/4 tsp salt
  • 1 egg or 1 small ripe banana mashed 
  • ½ tsp Sri Lankan cinnamon powder 
  • 1 cup almond milk / coconut milk 
  • 2 tbsp organic jaggery powder 
  • 1 tbsp pure and unpasteurized honey 
  • 1 tbsp cold-pressed coconut oil or A2 ghee
  • 2 tbsp pumpkin and sunflower seeds to garnish 

Method:

  1. In a large bowl, whisk together the jowar flour, cinnamon powder, and salt.
  2. In another bowl, beat the egg/ripe mashed banana and then stir in the almond milk, jaggery powder, and cold-pressed coconut oil or A2 ghee.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a lightly greased skillet over medium heat.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
  7. Serve the pancakes warm, drizzled with a few drops of honey.
  8. Garnish with pumpkin and sunflower seeds. If you have red cake sprinkles, don’t wait to use them on top.

Notes:

  • The fibre in jowar aids digestion and promotes gut health, while honey has prebiotic properties that support beneficial gut bacteria.
  • Both pumpkin and sunflower seeds are rich sources of omega-3 fatty acids, which are beneficial for heart health, brain function, and reducing inflammation.
