1 cup millet flour (can use any millet flour like pearl millet, ragi, jowar)
½ cup almond flour or coconut flour
¼ tsp salt
½ cup unsalted butter, softened
¾ cup organic coconut sugar
2 large eggs
1 tsp vanilla extract
1 cup buttermilk (homemade or made from A2 milk)
Optional Add-ins: Cacao nibs, chopped nuts
Method
- Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
- In a medium bowl, whisk together the millet flour, almond flour, and salt until well combined.
- In a separate large bowl, cream the softened unsalted butter and coconut palm sugar until light and fluffy using an electric mixer.
- Beat in the eggs, one at a time, until fully incorporated. Stir in the vanilla extract.
- Gradually add the dry flour mixture and buttermilk to the wet ingredients, alternating between the two. Start and end with the dry mixture, mixing until just combined after each addition.
- If you wish to add any optional add-ins like cacao nibs or chopped nuts, gently fold them into the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake the cupcakes in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
