Ingredients:

2 cups assorted chopped vegetables (sweet potatoes, carrots, beans, peas, steamed moong sprouts, etc.)

1 cup spinach/kale (as per availability)

½ tbsp avocado oil

Salt and pepper as per taste

For the Date Vinaigrette:

4-5 pitted dates

½ tbsp avocado oil

4 tsp apple cider vinegar

4 tsp crushed garlic

2 tsp chilli flakes

Salt and pepper as per taste

Method:

  1. Preheat the oven. Toss chopped vegetables in Avocado oil, salt, and pepper. Roast until tender and slightly crispy.
  2. Prepare the date vinaigrette: Blend pitted dates, Avocado oil, apple cider vinegar, crushed garlic, chilly flakes, salt, and pepper until smooth.
  3. Once Vegetables are roasted, let them cool slightly.
  4. Combine roasted veggies with mixed greens or spinach in a large bowl.
  5. Drizzle the warm date vinaigrette over the salad, tossing gently to coat evenly.
  6. Serve immediately.

Notes:

  • Dates are rich in fiber, vitamins (like B vitamins), minerals (such as potassium, magnesium, and iron), and antioxidants like flavonoids and carotenoids.
  • Adding seasonal produce makes it rich in fiber and supports a healthy gut microbiome.
