Guilt-Free Valentine’s Day Cake Recipe

This year, let your celebration be sweet and thoughtful with our homemade Beetroot Cake. Naturally rich in color and packed with fiber, it’s a guilt-free way to enjoy a decadent dessert. Easy to bake, decorate, and share, it’s perfect for spreading love without compromising on health. Try this wholesome twist for a heartfelt treat!
Ingredients:
- 1/2 cup sattu
- 1/2 cup oats flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter or A2 ghee
- 1/2 cup dates puree
- ¼ cup coconut milk (can use Almond milk or A2 milk as per choice)
- 2 ripe bananas
- 1 tbsp cocoa nibs
- 2 tbsp chopped almonds and walnuts
- 1/2 tsp cardamom powder
- 1/4 tsp pure vanilla essence
- 1 tsp beetroot powder
Method
- Mix all the dry ingredients like sattu, oats flour, baking powder, baking soda, and salt. Sieve them.
- Preheat the oven.
- Separately mix unsalted butter/A2 ghee and coconut milk. Whisk well.
- Add vanilla essence, cardamom powder, mashed bananas, date puree, and beetroot powder and mix until even.
- Slowly mix the dry ingredients into the wet mixture.
- Once done, add a little coconut milk , chopped almonds, and walnuts and adjust the consistency.
- Pour the mixture into the baking tray, sprinkle cacao nibs, and bake for 25 minutes at 180 degrees.
- Let it rest for 10 minutes before serving.
Power Tip:
If the cake sinks in the middle, there are chances that the tray used for baking was too small. Using more milk than the desired quantity also makes it sink. Be mindful of this.
Notes:
Apart from being rich in protein, sattu has generous proportions of iron, manganese, and magnesium. It is low in sodium. Adding oats flour provides fiber and other essential nutrients. Enjoy this special Valentine’s Day treat!
