Ingredients:
1 cup garden cress seeds (halim seeds)
½ cup grated coconut
2-3 green chilies (adjust to taste)
1 small piece of ginger
1-2 cloves of garlic (optional)
1 tbsp lemon juice
Salt to taste
Water (as needed)
Method:
- Begin by soaking the garden cress seeds in water for about 8 hours. This will allow them to sprout and increase their nutritional value.
- Drain and rinse the soaked seeds. In a blender, combine the sprouted garden cress seeds, grated coconut, green chilies, ginger, garlic, lemon juice, and a pinch of salt.
- Add a little water and blend until you get a smooth chutney-like consistency. You may need to scrape down the sides of the blender a few times.
- Taste the chutney and adjust the salt and lemon juice as per your preference.
- Transfer the chutney to an airtight container. It can be stored in the refrigerator for up to a week.
