Servings: 10-12 ladoos

Ingredients:
– 1 cup Khapli flour or ragi flour
– 1 tsp ajwain seeds
– 1 tsp saunf (fennel) seeds
– 2 tsp sesame seeds
– 1 cup organic jaggery powder grated
– 3 tsp You Balance powder
– 1/4 cup coconut flakes
– 6 tsp or 2 tbsp A2 ghee
– 1/4 cup pumpkin seeds, crushed (for coating)
Method:
- In a pan, dry roast ajwain, saunf, and sesame seeds over medium heat until fragrant for about 2-3 minutes. Remove from the pan and set aside.
- In the same pan, add A2 ghee and melt over low heat. Add khapli flour or ragi flour to the pan and roast on low heat for 10-12 minutes or until golden brown and aromatic. Keep stirring continuously to avoid burning.
- Once the flour is roasted, add the toasted ajwain, saunf, sesame seeds, You Balance powder, and coconut flakes to the flour. Mix well and continue roasting for another 2-3 minutes. Turn off the heat and set the mixture aside.
- In a separate small pan, melt the grated jaggery with a few tablespoons of water over low heat, stirring continuously until it forms a smooth syrup.
- Pour the hot jaggery syrup into the flour mixture. Mix thoroughly until well combined and the mixture starts to come together. While the mixture is still warm, take small portions and shape them into round ladoos by rolling them between your palms.
- Spread the crushed pumpkin seeds on a plate. Roll each ladoo in the crushed pumpkin seeds to coat them evenly.
- Let the ladoos cool completely before storing them in an airtight container.
