Serves: 4

Ingredients:

  • 1 cup green or red lentils (pre-soaked for 8 hours)
  • 1/2 cup little millet (samai, pre-soaked)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1/2 cup diced tomatoes
  • 4 cups vegetable broth or water
  • 2 cups water
  • 1 tsp cumin
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Fresh coriander, chopped (for garnish)
  • 2 tsp cold-pressed avocado oil

Instructions:

  1. Heat the avocado oil in a pressure cooker. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
  2. Add the diced carrots to the pressure cooker and cook for a few minutes until they start to soften.
  3. Add the rinsed lentils, millet, diced tomatoes, vegetable broth (or water), cumin, red chili powder, turmeric, salt, and pepper to the pressure cooker. Stir everything together.
  4. Close the pressure cooker and cook for 3 to 4 whistles.
  5. Once the lentils and millet are cooked, carefully release the pressure from the cooker.
  6. Taste the soup and adjust the seasonings if needed.
  7. Serve the lentil soup hot, garnished with freshly chopped coriander.
