Ingredients:

½ cup toasted and powdered steel-cut oats
½ tbsp A2 ghee
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
1 bell pepper, diced
½ cup green peas
1 cup chopped tomatoes
4 cups water
1 tsp oregano
Few drops of lemon juice
Salt and black pepper to taste

Method:

  1. Heat the ghee in a large pot over medium heat. Add the chopped onion, minced garlic, and sauté until translucent.
  2. Add the diced carrots, bell pepper, and peas to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Stir in the chopped tomatoes, oats, water, oregano, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes until the vegetables and oats are tender.
  5. Once the soup is cooked, taste and adjust the seasoning if needed.
  6. Ladle the soup into bowls and add a few drops of lemon juice.
  7. Serve hot.

Notes:

– Oats contain many essential vitamins and minerals, including manganese, phosphorus, magnesium, copper, iron, zinc, folate, vitamin B1 (thiamin), and vitamin B5 (pantothenic acid).
