Savory Kala Gehu Thepla

Serves: 6 thepla

Ingredients 

1 cup black wheat flour (Kala Gehu)
¼ cup sattu 
¼  cup chopped fresh fenugreek leaves 
½ tbsp grated ginger
1 green chili, finely chopped (optional)
½  tsp turmeric powder
½  tsp red chili powder
½  tsp cumin seeds powder
Salt to taste
Water as needed
A2 ghee for cooking

Method 

  1. Combine the black wheat flour, sattu, chopped fenugreek leaves, grated ginger, green chili, turmeric powder, red chili powder, cumin powder, and salt in a mixing bowl. Mix everything.
  2. Gradually add water and knead the mixture into a smooth dough. 
  3. Once the dough is ready, cover it and let it rest for about 15-20 minutes.
  4. After the resting period, divide the dough into small portions and shape them into balls.
  5. Take one dough ball and dust it with some flour. Roll it out into a thin, thepla using a rolling pin.
  6. Heat a tawa over medium heat. Place the rolled thepla on the heated tawa and cook for a minute or until you see bubbles forming on the surface.
  7. Flip the thepla and spread some ghee on the cooked side. Cook for another minute until both sides are evenly cooked and lightly browned.
  8. Remove the cooked thepla from the tawa and repeat the process with the remaining dough balls.
  9. Serve hot black wheat flour theplas with yoghurt, pickle, chutney, or any other accompaniment of your choice.

Notes:

  • Black wheat flour is rich in fiber and antioxidants and contains vitamins like vitamin B-complex, and vitamin E, and minerals such as iron, magnesium, and zinc.
  • Adding methi to the thepla makes it rich in fiber. It contains a compound called galactomannan, which can slow down the absorption of sugar in the bloodstream and improve insulin sensitivity.
