Ingredients:
2 cups puffed rice
½ cup sliced almonds
½ cup cashews
½ cup raisins
¼ cup peanuts
1 tbsp cold-pressed coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
10-12 curry leaves
2-3 green chilies (chopped)
½ tsp turmeric powder
½ tsp red chili powder
Salt to taste
¼ cup dried coconut flakes (optional)
Method:
- Heat the coconut oil in a large pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
- Add curry leaves, green chilies, and peanuts. Roast for a couple of minutes until the peanuts turn golden.
- Add sliced almonds, cashews, and raisins. Continue roasting until the nuts turn light golden.
- Reduce the heat to low and add turmeric powder, red chili powder, and salt. Mix well to coat the ingredients evenly.
- Add the puffed rice to the pan and gently combine everything. Cook for 2-3 minutes, stirring continuously to ensure the puffed rice is well-coated with the spices.
- Turn off the heat and let the mixture cool down. If using dried coconut flakes, add them now.
- Once cooled, store the Chivda in an airtight container. It will stay fresh for a few weeks.
