Gluten-Free Puffed Rice Chivda Recipe

Ingredients:

2 cups puffed rice 
½ cup sliced almonds
½ cup cashews
½ cup raisins
¼ cup peanuts
1 tbsp cold-pressed coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
10-12 curry leaves
2-3 green chilies (chopped)
½ tsp turmeric powder
½ tsp red chili powder 
Salt to taste
¼ cup dried coconut flakes (optional)

Method:

  1. Heat the coconut oil in a large pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
  2. Add curry leaves, green chilies, and peanuts. Roast for a couple of minutes until the peanuts turn golden.
  3. Add sliced almonds, cashews, and raisins. Continue roasting until the nuts turn light golden.
  4. Reduce the heat to low and add turmeric powder, red chili powder, and salt. Mix well to coat the ingredients evenly.
  5. Add the puffed rice to the pan and gently combine everything. Cook for 2-3 minutes, stirring continuously to ensure the puffed rice is well-coated with the spices.
  6. Turn off the heat and let the mixture cool down. If using dried coconut flakes, add them now.
  7. Once cooled, store the Chivda in an airtight container. It will stay fresh for a few weeks.
