Simple Homemade Kombucha Recipe

After the festive indulgence, your body might be craving some extra care to restore balance and vitality, especially in your gut. 4 litres of water
8 black tea bags
1 cup coconut palm sugar
1 SCOBY with 1 cup starter tea
Large glass or ceramic container
Cloth and rubber band
Instructions:
- Boil water, then let it cool to around 70°C.
- Pour hot water into the container, add tea bags and coconut palm sugar. Stir until sugar is dissolved. Let it steep for 10-15 minutes.
- Remove tea bags and let the sweetened tea cool to room temperature.
- Gently add SCOBY and starter tea.
- Cover with a cloth and secure with a rubber band. Place in a warm, dark place (around 30°C) to ferment for 7-15 days. Taste it after 7 days to check for desired tanginess.
- Remove SCOBY and set aside some starter tea for the next batch. Pour remaining kombucha into bottles, leaving some space at the top.
- Optionally, add flavourings like ginger, fruit, or herbs.
- Seal bottles and let them sit at room temperature for 2-5 days for secondary fermentation.
- Refrigerate bottles to slow down fermentation.
- Your homemade kombucha is ready to drink! Remember to keep some as starter tea for your next batch.

- Customise flavours to your liking.
- Experiment with fermentation times to find your preferred taste.
