Ingredients:

– 1 cup fresh corn kernels (non-GMO)

– 2 tsp unsalted butter

– 1/4 cup finely chopped bell peppers (red, green, or yellow)

– 1/4 cup finely chopped cucumber

– 1/4 cup finely chopped tomatoes (seeds removed)

– 1/4 cup finely chopped onions

– 1 tsp chaat masala

– 1/2 tsp red chilli powder (adjust to taste)

– 1/2 tsp cumin powder

– Salt to taste

– Freshly squeezed juice of half a lemon

– Fresh coriander leaves, chopped (optional)

Method:

  1. Boil or steam the corn kernels for 5 minutes until tender.
  2. Mix the unsalted butter into the warm corn kernels until melted and well combined.
  3. Add the finely chopped bell peppers, cucumber, tomatoes, and onions to the warm, buttered corn. Mix well.
  4. Add the chaat masala, red chilli powder, cumin powder, and salt. Mix thoroughly to ensure all the vegetables and corn are evenly coated with the spices.
  5. Squeeze the fresh lemon juice over the spiced corn and vegetable mixture and mix again.
  6. Sprinkle with chopped coriander leaves for an extra burst of flavour and colour.
