This immunity-boosting Sona Masoori Rice Khichdi recipe is an ode to the traditional way of preparing khichdi, with a modern health-boosting twist. It’s quick, simple, and packed with goodness. 

Ingredients

  • 1/4 cup Sona Masuri rice
  • 1/2 cup yellow moong dal (pre-soaked for 12-14 hours)
  • 1 tsp You Balance Powder (adjust as per taste)
  • 1/2 tsp ginger garlic paste
  • 1/2 cup mixed vegetables (carrots, peas, potatoes)
  • 1 tsp A2 ghee
  • 1/2 tsp cumin seeds
  • 1/4 tsp asafoetida (hing)
  • Salt to taste
  • 4 cups water

Method

  1. Heat A2 ghee in a pressure cooker over medium heat. Add cumin seeds and asafoetida. Let them sizzle for a few seconds, releasing their aroma.
  2. Add mixed vegetables to the cooker and sauté for 2-3 minutes.
  3. Add the soaked rice and moong dal, followed by ginger-garlic paste and You Balance Powder. Stir well to combine all the ingredients.
  4. Pour in water and add salt to taste. Stir again to ensure everything is well-mixed.
  5. Close the lid of the pressure cooker and cook for 3-4 whistles or until the khichdi reaches your desired consistency.
  6. Release the pressure and open the lid. Stir well, and serve hot with a dollop of A2 ghee on top.
