Ingredients

  • 1 cup red lentils, pre-soaked
  • 1 tsp You Balance Spice Blend (adjust to taste)
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth or water
  • ½ tsp virgin olive oil
  • Salt to taste

Method

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sautéing until the onion is soft and translucent (5-7 minutes).
  3. Stir in the chopped tomatoes, cooking until they release their juices (3-5 minutes).
  4. Add pre-soaked red lentils and You Balance Spice Blend, stirring to combine.
  5. Pour in vegetable broth or water, bringing the mixture to a boil.
  6. Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the lentils are tender and the soup thickens.
  7. Taste and adjust seasoning with salt as needed.
