Preparation Time: 30 minutes

Total Time: 20 minutes

Ingredients

1 cup millets (soaked for 12 hours)

½ cup pre soaked moong dal 

½ cup methi leaves, chopped 

½ cup brinjal, chopped 

1 medium tomato, finely chopped

2 tsp ginger, grated

2-3 cloves garlic, crushed  

Salt to taste 

3 cups water

1 tsp You Balance powder 

1 tsp red chilli powder 

½ tsp garam masala powder 

2 tsp cumin seeds  

1-inch cinnamon stick

1 cardamom pod, slightly crushed 

1 bay leaf

2-3 cloves

2 tsp A2 ghee

Method

  1. Heat ghee in a pressure cooker and add all the spices. Saute for half a minute till you get a nice aroma.
  2. Add ginger and garlic, and sauté till they turn pink.
  3. Add brinjal, tomatoes, and powdered spices. Cook till the vegetables soften.
  4. Add pre-soaked moong dal, millet, and methi leaves. Sauté for a few minutes.
  5. Add water and salt. Close the lid and pressure cook on a high flame for two to three whistles.
  6. Serve hot with a dollop of ghee and garnish.

Pre-soaked moong dal cooks faster and becomes softer, blending seamlessly into the khichdi for a smoother texture. Additionally, soaking moong dal enhances its digestibility and nutrient absorption, making your meal more nutritious and easier on the stomach.
