Ingredients:

- 2 tbsp ragi flour (finger millet flour)

- 2 tbsp sattu (roasted gram flour)

- 2 cups water

- 1 cup milk (optional, can substitute with almond milk or other plant-based milk)

- 1-2 tbsp organic jaggery

- A pinch of cardamom powder (optional)

- 1 tbsp sliced almonds

- 1 tbsp pumpkin seeds

 Method:

  1. In a small bowl, mix the ragi flour and sattu with a little water to make a smooth paste.
  2. In a saucepan, bring 2 cups of water to a boil.
  3. Gradually add the ragi-sattu paste to the boiling water, stirring continuously to avoid lumps.
  4. Add jaggery to the mixture and stir until it dissolves completely.
  5. Reduce heat and let the mixture simmer for 5-7 minutes, stirring occasionally.
  6. Add cardamom powder and mix well.
  7. Stir in the sliced almonds and pumpkin seeds. Cook for another minute.
  8. Pour the porridge into bowls.
  9. Allow to cool slightly before serving, as it will thicken further.
